Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 bunch fresh mint leaves
  • 5 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 4 ounces dark chocolate, chopped
  • 2 teaspoons coconut oil

Мethod of preparation

Begin by infusing the heavy cream and whole milk with fresh mint leaves. Heat them in a saucepan until hot but not boiling, then remove from heat and let steep for 2 hours. After steeping, strain to remove the mint leaves. Whisk together egg yolks and sugar until light and creamy. Slowly mix in the mint-infused milk. Cook this mixture over low heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat, stir in vanilla and peppermint extracts, and chill the mixture in the fridge for at least 4 hours, preferably overnight.

Melt dark chocolate and coconut oil together, stirring until smooth. Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions. Once it's nearly done, drizzle in the melted chocolate, allowing it to solidify and form ripples as you continue to churn. Freeze the ice cream until firm, then serve and enjoy the refreshing taste of summer any day of the year.
