Ingredients

  • 400g mixed seafood (shrimp, scallops, squid rings)
  • 2 tbsp olive oil
  • 1 large orange, juiced and zest
  • 1 lemon, juiced and zest
  • 2 garlic cloves, finely chopped
  • 1 red chili, deseeded and finely chopped
  • Salt and pepper to taste
  • A handful of fresh cilantro, chopped
  • 2 tbsp honey

Мethod of preparation

Start by marinating your seafood. In a bowl, combine olive oil, orange juice and zest, lemon juice and zest, garlic, chili, salt, pepper, and honey. Mix well. Add the mixed seafood to this marinade and let it sit for at least 30 minutes. Heat a pan over medium-high heat. Once hot, add the marinated seafood, reserving the marinade. Cook until the seafood is pink and just cooked through, about 3-4 minutes. Pour the remaining marinade into the pan and let it simmer for another 2 minutes, allowing the sauce to thicken slightly. Finally, garnish with fresh cilantro. Serve your Citrus Seafood Fiesta hot, with a side of steamed rice or fresh greens.
