  • 500g wild mushrooms, cleaned and sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh sage, finely chopped
  • 1 liter vegetable broth
  • 200ml heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Мethod of preparation

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute. 2. Add the sliced wild mushrooms to the pot and cook for about 10 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture. 3. Stir in the fresh sage and cook for an additional 2 minutes, allowing the flavors to meld together. 4. Pour in the vegetable broth and bring the soup to a gentle boil. Reduce the heat and let it simmer for 15 minutes. 5. Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest chunky. 6. Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 5 minutes to allow the cream to heat through. 7. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread or your favorite side.
