Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 ripe pears, peeled, cored, and chopped
  • 4 cups vegetable broth
  • 2 large bunches of watercress, roughly chopped
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional for garnish)

Мethod of preparation

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft and translucent, about 5 minutes. Add the chopped pears and cook for another 3 minutes, allowing them to soften slightly. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. After simmering, add the chopped watercress to the pot, reserving a small amount for garnish if desired. Cook until the watercress is wilted, about 5 minutes.
