  • 1 tablespoon olive oil

Instructions

Step 1: Rinse the red lentils thoroughly under cold water and set aside.

Step 2: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 3: Add the minced garlic, freshly grated ginger, ground turmeric, ground cumin, and ground coriander. Cook for an additional 2 minutes, stirring constantly to prevent burning.

Step 4: Add the diced carrot and celery, and cook for another 5 minutes until they begin to soften.

Step 5: Pour in the vegetable broth and bring to a boil. Add the rinsed red lentils, stir well, and reduce the heat to low. Cover and let simmer for 20-25 minutes, or until the lentils are tender.
