Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 small rutabaga, peeled and diced
  • 2 medium-sized potatoes, peeled and diced
  • 1 liter vegetable broth
  • 200 ml heavy cream
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • Chopped parsley for garnish

Мethod of preparation

Step 1: Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.

Step 2: Add the diced carrots, parsnips, rutabaga, and potatoes to the pot. Stir well to coat the vegetables with the oil and onions. Cook for about 5-7 minutes, stirring occasionally.

Step 3: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 25-30 minutes, or until the vegetables are tender.

Step 4: Carefully transfer about half of the soup to a blender and blend until smooth. Return the blended soup to the pot and stir to combine. This will thicken the chowder, giving it a creamy texture while still retaining chunks of root vegetables.

Step 5: Add the heavy cream and fresh thyme to the pot, stirring to incorporate. Season the chowder with salt and pepper to taste. Let it simmer for another 5 minutes.
