Ingredients
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 stalks lemongrass, finely chopped
- 6 large carrots, peeled and sliced
- 4 cups vegetable broth
- 1 can (400ml) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Мethod of preparation
Step 1: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, fresh ginger, and chopped lemongrass, sauté for another 2-3 minutes until fragrant.
Step 2: Add the sliced carrots to the pot and stir well to coat them with the aromatic mixture. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.
Step 3: Once the carrots are cooked through, remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, transfer the soup in batches to a regular blender and blend until smooth.
Step 4: Return the blended soup to the pot and stir in the coconut milk. Bring the soup to a gentle simmer and season with salt and pepper to taste.
