Ingredients

  • 1 cup of green lentils, rinsed
  • 2 large carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 turnip, peeled and diced
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups vegetable broth
  • Salt and pepper to taste

Мethod of preparation

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. 2. Add the minced garlic, diced carrots, parsnips, and turnip to the pot. Cook for another 5 minutes, stirring occasionally. 3. Stir in the rinsed lentils, dried thyme, and rosemary. Pour in the vegetable broth and bring the mixture to a boil. 4. Once boiling, reduce the heat to low and let the soup simmer for approximately 45 minutes, or until the lentils and vegetables are tender. 5. Season with salt and pepper to taste. If the soup is too thick, add more broth or water to reach your desired consistency. 6. Serve the soup hot, garnished with fresh parsley.
