Ingredients
- 1 lb carrots, peeled and chopped
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- Salt to taste
- Freshly ground black pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
Мethod of preparation
1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
2. Add minced garlic and grated ginger, and sauté for another 2 minutes until fragrant.
3. Add the peeled and chopped carrots to the pot and cook for an additional 4-5 minutes, stirring occasionally.
4. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes until the carrots are tender.
5. Use an immersion blender to puree the soup until smooth, or transfer the soup in batches to a blender and blend until smooth.
6. Return the pot to low heat and stir in the coconut milk. Let it simmer for another 5 minutes to combine the flavors.
7. Season with salt, freshly ground black pepper, and lime juice to taste.
8. Serve hot, garnished with chopped fresh cilantro. Pair it with crusty bread or enjoy as is for a comforting meal.
