Ingredients

  • 1 cup farro
  • 1/2 cup dried apricots, chopped
  • 1/4 cup walnuts, chopped
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon
  • 1/4 tsp cumin
  • 1/2 lemon, juiced
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Zest of 1 lemon

Мethod of preparation

1. Begin by rinsing the farro under cold water. In a medium saucepan, combine the farro with 3 cups of water and a pinch of salt. Bring to a boil. Once boiling, reduce heat to low, cover and simmer for 25-30 minutes until the farro is tender and chewy. Drain any excess water and set the farro aside to cool slightly. 2. In a large mixing bowl, combine the cooled farro with the chopped dried apricots and walnuts. Drizzle with olive oil and add the cinnamon, cumin, and a pinch of salt and pepper. Toss everything to ensure even coating and distribution of spices. 3. Squeeze the juice of half a lemon over the salad and add the chopped parsley. Toss again to combine all the flavors. 4. Finish by grating the zest of one lemon over the entirety of the salad, giving it a final toss. Allow the salad to rest for at least 10 minutes to let the flavors meld together. This dish can be served at room temperature or chilled, making it a versatile accompaniment. Enjoy the Spiced Apricot Farro Salad as a refreshing yet warming side dish, perfect for any occasion.
