Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Мethod of preparation

Preheat your oven to 400°F (200°C). In a large baking dish, evenly spread the cherry tomatoes. Drizzle with half of the olive oil, and season with salt and pepper. Roast for 15-20 minutes or until the tomatoes are soft and bursting. In a separate bowl, toss the shrimp with the remaining olive oil, garlic, oregano, red pepper flakes, salt, and pepper. Take the baking dish out of the oven. Add the shrimp on top of the tomatoes. Sprinkle the crumbled feta cheese over the shrimp. Return the dish to the oven and bake for 12-15 minutes, or until the shrimp are pink and cooked through. Garnish with fresh parsley before serving. This dish is delicious served over cooked pasta, rice, or with crusty bread to soak up all the flavorful juices.
