  • 2 trout fillets, skin on
  • 2 peaches, sliced into wedges
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar

Begin by seasoning your trout fillets with salt, pepper, and half of the chopped rosemary. Heat a skillet with a tablespoon of olive oil over medium heat. Once hot, place the trout skin-side down and cook until the skin is crispy, about 4-5 minutes. Flip, and cook for another 3-4 minutes or until desired doneness. Remove from the skillet and set aside. In the same skillet, add another tablespoon of olive oil and the peach wedges. Sauté until they begin to soften, about 2-3 minutes. Add honey, balsamic vinegar, and the remaining rosemary, cooking until the peaches are nicely caramelized. To serve, place a bed of fresh arugula on each plate, top with the trout, and finish with the caramelized peaches surrounding the fish. The combination of sweet, savory, and fresh flavors will create a memorable meal.
