- Easy-to-follow step-by-step instructions
Ingredients
- 4 veal cutlets (about 6 oz each)
- 1 cup hazelnuts, finely chopped
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1/2 cup apricot preserves
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp fresh thyme leaves
Мethod of preparation
Step 1: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: In a shallow bowl, combine the chopped hazelnuts and breadcrumbs. In another shallow bowl, beat the eggs. In a third bowl, mix the flour with the salt and black pepper.
Step 3: Dip each veal cutlet into the flour mixture, coating both sides. Next, dip them into the beaten eggs, and finally, coat them with the hazelnut-breadcrumb mixture, pressing gently to adhere.
Step 4: Heat the olive oil in a large skillet over medium-high heat. Fry the veal cutlets until golden brown on each side, about 3-4 minutes per side. Transfer the cutlets to the prepared baking sheet.
Step 5: In a small saucepan, combine the apricot preserves, apple cider vinegar, Dijon mustard, and fresh thyme leaves. Cook over medium heat, stirring frequently, until the mixture is smooth and glossy, about 5 minutes.
Step 6: Brush the apricot glaze generously over each veal cutlet. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the veal is fully cooked through.
Step 7: Serve the veal cutlets hot, garnished with additional thyme leaves if desired. Enjoy the harmony of flavors in this exquisite dish!
