- 4 lbs beef short ribs
- 1 can (13.5 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon sea salt
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons lime juice
- Fresh cilantro for garnish

Preheat your oven to 325°F (160°C). Begin by seasoning the beef short ribs evenly with salt. In a deep skillet or Dutch oven, brown the short ribs on all sides over medium heat until they develop a nice caramelized exterior, about 6-8 minutes. Remove and set aside.
In the same skillet, add the chopped onions and sauté until soft and translucent, about 5 minutes.
