Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup chilled unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 egg yolk
  • 2 tbsp cold water
  • 4 large oranges, juiced and zested
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp saffron threads (steeped in 1 tbsp hot water)
  • Powdered sugar for dusting
  • Fresh mint leaves for garnish (optional)

Мethod of preparation

1. Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom. 2. In a food processor, combine flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs. Add egg yolk and cold water, pulsing until the dough begins to come together. 3. Transfer the dough to a lightly floured surface and knead gently to form a ball. Flatten into a disk, wrap in plastic wrap, and chill for 30 minutes. 4. Roll out the chilled dough into a 12-inch circle on a floured surface. Fit the dough into the prepared tart pan, pressing it into the edges and trimming any excess. Prick the bottom with a fork. 5. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for another 10 minutes until golden. Let the crust cool. 6. In a large bowl, whisk together orange juice, zest, sugar, eggs, cream, and salt until smooth. Stir in the saffron water, ensuring even distribution. 7. Pour the filling into the cooled crust. Bake for 25-30 minutes, or until the filling is set and lightly golden on top. 8. Allow the tart to cool completely before removing from the pan.
