Ingredients
- 200g (7oz) phyllo dough
- 200g (7oz) chopped mixed nuts (walnuts, pistachios, almonds)
- 100g (3.5oz) unsalted butter, melted
- 50g (1.8oz) sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 cup honey
- 2 tbsp water
- 1 tbsp orange blossom water
- 1/2 cup sugar
- 1/2 cup water
- 1/4 cup honey
- 1 tsp lemon juice
- 1/2 tsp orange zest

Preparation
Preheat your oven to 325°F (163°C). Grease a 9x13 inch baking dish with a bit of the melted butter.
Making the Nut Mixture
In a medium bowl, combine the chopped nuts, 50g of sugar, ground cinnamon, and ground cardamom. Stir well to ensure the spices are evenly distributed.
Assembling the Rolls
Unroll the phyllo dough and keep it covered under a damp cloth to prevent it from drying out. Take one sheet of phyllo dough and brush it lightly with melted butter. Place another sheet on top and butter it as well. Sprinkle a layer of the nut mixture over the phyllo dough. Roll the phyllo up tightly and place it in the prepared baking dish. Repeat with the remaining dough and nut mixture.
Baking
Once all the rolls are assembled in the baking dish, brush the tops generously with the remaining butter. Bake in the preheated oven for 25-30 minutes, or until the rolls are golden brown and crisp.
Preparing the Syrup
While the baklava rolls are baking, prepare the syrup. In a small saucepan, combine 1/2 cup of sugar, 1/2 cup of water, and 1/4 cup of honey. Heat over medium heat, stirring until the sugar dissolves. Add the lemon juice, orange zest, and orange blossom water. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes until thickened slightly.
Bringing It All Together
