Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 tbsp fresh thyme leaves, chopped
  • 1/4 cup honey
  • 3 large eggs
  • 3/4 cup fresh lemon juice (about 4 lemons)
  • 1 tbsp lemon zest
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • Pinch of salt
  • Fresh thyme sprigs, for garnish

Preheat the Oven:

Preheat your oven to 350°F (175°C).

Prepare the Crust:

In a food processor, combine the flour, powdered sugar, and chopped thyme leaves. Add the chilled butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and process until the dough starts to come together. Press the dough into a 9-inch tart pan with a removable bottom, making sure to cover the bottom and sides evenly.

Blind Bake the Crust:

Line the tart crust with parchment paper and fill with pie weights or dried beans. Bake for 15-20 minutes until lightly golden. Remove the weights and parchment paper, and bake for an additional 5 minutes to fully set the crust.

In a medium bowl, whisk together the granulated sugar, lemon juice, lemon zest, eggs, heavy cream, honey, and a pinch of salt until smooth and well combined.
