Ingredients

  • 1 cup of all-purpose flour
  • 1 cup of granulated sugar
  • 6 large eggs, separated

  • 1/4 cup of water
  • 1 teaspoon of vanilla extract
  • 1/2 cup of unsalted butter, melted
  • 2 cups of mixed berries (strawberries, blueberries, raspberries)
  • 1 cup of heavy cream
  • 1/2 cup of powdered sugar
  • 1 teaspoon of lemon zest

Мethod of preparation

Begin by preheating your oven to 325°F (163°C) and lightly greasing a 9-inch round cake pan. In a large bowl, mix together the flour and granulated sugar. In a separate bowl, beat the egg whites with the cream of tartar until soft peaks form. Gradually add water and vanilla extract, continuing to beat.

Gently fold in the egg white mixture into the flour mixture until just combined. Then, fold in the melted butter. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow to cool.

Whip the heavy cream with the powdered sugar and lemon zest until stiff peaks form. Cut the cooled cake horizontally to create two layers. Spread half of the whipped cream over the first layer and top with half of the mixed berries. Place the second layer on top and repeat with the remaining whipped cream and berries.
