Ingredients

  • 4 oz (113 g) dark chocolate, chopped
  • 1/2 cup (113 g) unsalted butter
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (30 g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp peppermint extract
  • Powdered sugar for dusting
  • Fresh mint leaves for garnish (optional)

Мethod of preparation

1. Preheat your oven to 425°F (220°C). Grease 4 individual ramekins and dust them lightly with flour, tapping out any excess. Set aside. 2. In a medium heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of gently simmering water (double boiler) and stir occasionally until fully melted and smooth. Remove from heat and let cool slightly. 3. In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy. Gradually pour the chocolate mixture into the egg mixture, whisking continuously to combine. 4. Sift the flour and salt into the chocolate batter and gently fold until just combined. Add the peppermint extract and give it a gentle stir. 5. Divide the batter evenly among the prepared ramekins. Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are set but the centers are still slightly soft (the centers should jiggle just a bit when you move the ramekins). 6. Remove from the oven and let the cakes cool in the ramekins for about 1 minute. Run a knife around the edges of each cake to loosen, then carefully invert them onto serving plates. 7. Dust the cakes with powdered sugar and garnish with fresh mint leaves if desired. Serve immediately while they are still warm and the centers are molten, and enjoy the delightful burst of peppermint chocolate goodness.
