Ingredients

  • 1/2 cup jasmine green tea
  • 1 cup almond flour
  • 1 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond milk
  • 1/4 cup sliced almonds for garnish

Мethod of preparation

1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. 2. Brew the jasmine green tea by steeping 1/4 cup of tea leaves in 1/2 cup of boiling water for 5-7 minutes. Strain and set aside to cool. 3. In a medium bowl, mix together the almond flour, all-purpose flour, baking powder, baking soda, and salt. 4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. 5. Gradually add the flour mixture to the butter mixture, alternating with the cooled jasmine green tea and almond milk. Begin and end with the dry ingredients, mixing just until incorporated. Be careful not to overmix. 6. Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle the sliced almonds evenly over the batter. 7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. 8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. 9. Once cooled, garnish with additional sliced almonds or a dusting of powdered sugar if desired. Serve and enjoy your Jasmine Green Tea Almond Cake.
