- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup sugar
- 3 large eggs
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- Zest of 1 lemon
- Zest of 1 lime
- Zest of 1 orange
- 1 cup blueberries (fresh or frozen)
- For the citrus syrup:
- Juice of 1 lemon
- Juice of 1 lime
- Juice of 1 orange
- 1/2 cup sugar
Мethod of preparation
Begin by preheating your oven to 350°F (175°C) and greasing a 9-inch round cake pan. In a medium bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream together butter and sugar until light and fluffy, about 5 minutes. Add eggs one at a time, fully incorporating each before adding the next. Mix in Greek yogurt, vanilla extract, and all the zests until just combined. Gently fold in the blueberries.
Sift the dry ingredients into the wet ingredients, stirring until just combined. Pour batter into prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
While the cake bakes, prepare the citrus syrup by combining all the juice and sugar in a small saucepan over medium heat. Stir until the sugar has dissolved, then simmer for 4 minutes. Remove from heat.
Once the cake is done, cool it in the pan for 10 minutes, then remove to a wire rack. While still warm, brush the cake with the citrus syrup. Let it cool completely before serving.
